Ghee is essentially good saturated fats from milk. The clarification process is believed to remove impurities, leaving behind a healthier product. The clarification process creates some nutritional changes - it removes milk solids, decreasing the lactose and casein content, which may offer benefits to those allergic or sensitive to dairy. A2 cow ghee is superior due to the presence of micronutrients such as Vitamin A, Vitamin K, Omega 3 and Omega 6 essential fatty acids. A2 cow ghee is made from A2 milk and possesses the benefits of A2 milk. A1 milk has A1 type of protein (casein) and A2 milk has A2 type of protein (casein). This is important because the way the milk is broken down and metabolised in the system is different. Its superiority is linked to the absence of BCM-7 (Beta-casomorphine-7) which is not present in A1 milk and has been held responsible for several undesirable health consequences. When BCM – 7 is released in the body it adversely affects the Central Nervous system, especially in children. It also impacts our metabolism giving rise to digestive ailments, constipation, long-term interference and consumption of this protein can also lead to obesity, diabetes and lactose intolerance.
